Aunt Lucy’s Corn Flake Cookies

You asked and you received!

Corn Flake Cookies

Preheat oven to 350.

1 cup butter

1 cup sugar

1 cup packed brown sugar

2 eggs, beaten

2 cups flour

1/2 tsp baking powder

1/2 tsp salt

1 tsp baking soda

1 tsp vanilla

2 cups oatmeal

2 cups Corn Flakes

1/2 cup coconut

1/2 cup chopped nuts (optional – and I don’t remember Lucy ever adding them)

Cream butter with sugar until fluffy; beat in eggs.

Sift flour w/baking powder, salt and baking soda; blend in to cream mixture.  Add vanilla.

Mix in oatmeal, Corn Flakes, coconut and nuts; mix until blended (the batter will be very stiff at this point).

Drop dough by 2 1/2 tbs (or large Pampered Chef scoop) onto an ungreased cookie sheet.  Flatten a bit with your fingers.

Bake at 350 for 10 – 12 minutes.  Should be soft when removed from oven.  These will flatten out and spread quite a bit – make sure there’s plenty of room between cookies.

My kids went bananas over these, just like I did all those years ago.  Enjoy 🙂
